#2 – Soup Kambing Haji M. Abdul Rajak

Introduction:

Haji M. Abdul Rajak started selling their mutton soup from a pushcart in 1955, before opening their own stall in Upper Boon Keng Market & Food Centre in 1975. The famous stall remains in its current location and is currently run by the third and fourth generations of the family. The soup was medium-bodied and slightly gelatinous. It was imbued with a flavourful and truly exotic taste but was not overpowering in any manner. Most the mutton soups are light-bodied and popular with the addition of pepper. This bowl was impressively balanced; there was no hint of spice at the end of every spoonful, but there was a wonderful mutton taste.
