#1 – Lamberts Restaurant

Introduction:

Earl and Agnes Lambert with 14 cents between them, borrowed $1500 from Tish Jones and with 5 employees opened for business in a small building on South Main Street in Sikeston Missouri. It consisted of a 9-stool counter and 8 tables for a total seating capacity of 41 people. Their policy of serving vegetables, meat, and dessert was immediately established. These were trying years for everyone, World War II and severe rationing made restaurant operations extremely difficult. The war years were greeted with many meatless days and supplies of all kinds were in short supply — but somehow and some way they were able to hang on.

Earl Lambert passed away in 1976, and his son Norman and wife Patti entered into the restaurant business as partners to Agnes Lambert, who still worked eight hours a day, six days a week.

Introduction:

At RDA, they serve modern Australian cooking, thoughtful, and elegant food in a relaxed and informal setting.

Guests are invited on a culinary journey of Australian flavours and techniques, respecting the traditions Dan learnt while perfecting his craft in France.

Dan Arnold grew up in Brisbane and did his apprenticeship before leaving Australia in 2011 to learn French cuisine.

He worked 6 years as sous-chef of Restaurant Serge Vieira, in France (2 Michelin stars and Bocuse d’Or 2005).

Dan loves a challenge, while working in France, he represented Australia in the World finale of Bocuse d’Or in 2017 and finished in 8th position, the best-ever result for Australia! To achieve this, he had the help of an amazing team composed of MOF, Michelin star chefs, and Bocuse d’Or winner.

After 7 years in France, he decided to come home to realize his dream: have his own restaurant.

Back in Australia, Dan and his wife Amelie opened their restaurant in July 2018 in Fortitude Valley, Brisbane. Since then, Dan and his team are creating tasting menus using ingredients sourced from small producers and local farms.

At the end of 2021, the brothers opened Pilgrim. Located in a beautiful heritage-listed space at the Barracks, Pilgrim Bar & Restaurant replaces Fogata, and also reflects a huge vehemence for Latin-American cuisine, love for good local produce, and genuine friendly service.
