Introduction: At Bossi Ban Mian, we here only offer three noodle items: soup, dry, or their signature, and you can get them in either soup or dry form. Then you choose between a noodle of your choosing, along with any toppings you request. Another well-executed item was the seafood. Each of the seafood items was cooked separately to ensure that they weren’t overcooked, and this extra step really paid off. The abalone, although canned, was plump and chewy, the scallop was borderline firm with a bite, and the prawn was sweet and juicy.

Introduction: Now, most Kway Chap stalls are no more than a dime a dozen, serving mediocre standards. But we’ve discovered a place in which the essence of this Teochew dish is truly captured: Garden Street Kway Chap at Serangoon Garden Market & Food Centre! What we love most about Garden Street Kway Chap is they thoroughly clean the innards and there’s no stench. The Tau Pok would ooze gravy when we bit into it, making it all the more delectable — though the Tau Pok was slightly on the tougher side.

#4 – Ah Seng Braised Duck Rice

Introduction: Mr Ng Kim Seng, the proprietor, presented his Teochew braised duck recipe around 1965. He started a booth at Lim Tua Tow Market on Upper Serangoon Road. His children, Wendy Ng and Ng Teck Siah helped out after their school, by taking the orders, serving, and learning the recipe. He relocated the booth to Serangoon Garden Food Centre after the demolition of Lim Tua Tow Market. Wendy decided to take over this stall when it was time to move the main stall back to Serangoon Garden Food Centre. The Kway Chap set included the well-seared-and-garlicked big leftovers, braised eggs, fish cakes, braised sticky pastry, and braised duck that I added to their dinner. The flat rice sheets tasted aged and delicious served with braising sauce then enhanced with fried onions and cilantro.

Introduction: Today, Madam Sau’s stall is run by her son and they continue to serve their low-cost Soy Sauce Chicken Rice ($3). Introduction: Fong Kee stall sold pan-fried dumplings, rice cake, dough skin soup, and Zha Jiang Noodles. The steamer was filled with sticky and more delicate than lighter dumplings, the dumplings had a slight charred and crispy coating, which was pleasing to the taste with the dumpling skins having a fine, thin layer and fresh filling flavor.
