#1 – Naked Finn

Introduction:

Naked was coined by the wife, based on how she perceives the chef’s philosophy of unadulterated simplicity. Finn is the name of the lead from the 1998 movie version of Great Expectations. Francesco Clemente was commissioned for the paintings and drawings in the film and loved the sketchbook of sea life that Finn ‘drew’. They believe less is more… but to achieve that, They actually need to do more (work), as sourcing and preserving quality takes up an enormous amount of resources, in terms of time and money.

With top-quality ingredients, it’s a shame to embellish and hide their natural subtle flavors with unnecessary seasoning and so they usually stick with just olive oil, sea salt and occasionally, unsalted butter when cooking.

The dips and sauces they offer are basically “modifiers” to add sweetness, saltiness, sourness and spiciness. The chef personally prefers not to use them but it is your choice as taste is personal.

Achieving consistency in their products is based on having quality supplies coupled with maintaining a strong and capable team. Their entire core team has been with them since the beginning and that has allowed seamless knowledge and skills transfer to the new hires.

Sourcing for top-quality ingredients from the best suppliers does not, and should not be exclusive to well-known products from big-name suppliers. In fact, most of their products are sourced from smaller fisheries that focus on non-mainstream species and truly sustainable practices.

Sustainability to them is not about buying sustainably caught vulnerable or endangered species. It is the focus on introducing non-mainstream species to their customers so that those under threat will have a chance of recovery.

Their menu lists the official FAO and scientific names of the species they offer. This is their fight against seafood fraud in Singapore. Being informed, they believe their customers will be better equipped in making the right choices in the future, be it in their restaurants or others.

More than 90% of their products are (hand)made in-house, from the sauces to the sorbets. This means the team works throughout the day with no rest between lunch and dinner. This is to ensure product quality and consistency.

Value is paying a reasonable rate for quality products. Their menu is not priced low but it is definitely not overpriced. They work really hard to keep their capital and operating expenses low just so they can price their products at a much lower margin than the industry standards.

#2 – Ristorante Takada

Introduction:

Ristorante Takada is a brand new Italian-Japanese restaurant located along Alexandra Road, standing out from the swanky stretch of shops in the recently launched Alexis apartment. The restaurant is helmed by Chef Masahiro Takada, who has honed his skills in Michelin-starred restaurants in both Italy and Japan.

The 38-year-old former Executive Chef of the renowned Osteria La Luna Rossa (in Tokyo and Singapore) has carved a reputation for creating Italian and Japanese fusion masterpieces. The exciting menu and cooking techniques at Ristorante Takada are inspired by Chef Takada’s 8-year stint in Italy to bring out the best of Italian flavors.
