7. Kucina Italian Restaurant

Introduction: Kucina Italian Restaurant is founded in June 2016 by Chef Gero @ Omar, an Italian-Muslim revert, who has over 30 years of experience in Italian cuisine. Realising that there’s no authentic and halal Italian food in Singapore, he decided to open the first one. Chef Gero wants to introduce Italian food to the Muslim community, who may not have the chance to enjoy such food due to the ingredients commonly used in Italian dishes.

Authenticity, in Kucina’s context, is all about retaining the original method of preparing Italian food – no short-cuts or fusion. You can never find any other halal Italian food in Singapore that are more authentic and halal than the food served at Kucina. Why? Firstly, the restaurant is spearheaded by an Italian head chef who has an extensive knowledge on Italian food. Secondly, and most importantly, it is MUIS halal certified.

The word Kucina is inspired by the actual word “Cucina” which means ‘kitchen’ in Italian. To suit the local enunciation of words, the letter K is used instead of C. Hence, the word KUCINA is formed.

The open concept kitchen is introduced to allow customers to have a first-hand view of the preparation of the food by the chefs. They will be able to witness the freshness of produce used and the passion that the chefs possess in order to deliver the best Halal Italian food. 13. The Halia

Introduction: Halia – Malay for ginger – is located in the one-hectare Ginger Garden of the Singapore Botanic Gardens where over 250 species of gingers with their stunning foliage and colourful flowers thrive. The construction of Halia was carried out simultaneously with the development of the Ginger Garden in the year 2000. Careful consideration was given to the special park setting, such that architecture conformed to the contours of the land, the dignity of mature trees and the preservation of heritage.

In 2001, the Halia was officially opened. Fika is a social institution in Sweden; it means having a coffee with one’s colleagues, friends, date, or family. The word has quite ambiguous connotations and can mean anything from taking a break from work or other activities, to going on a date. Swedes are among the heaviest consumers of coffee in the world and this practice of taking a break for a coffee, typically with a cinnamon roll and/or some biscuits or cookies, or sometimes a smörgås on the side, is central to Swedish life.

Although the word may in itself imply “taking a break from work”, this is often emphasied using the word fikapaus (“fika pause”) or fikarast (“fika break”), with kaffepaus and kafferast, respectively, as near synonyms. The shorter word fika may equally well mean having coffee with a friend at a café or konditori (a “patisserie-based coffeehouse”)

23. Working Title – Burger Bar

Introduction:

The early tale of (working title) brims with nostalgia and grit. Fresh off our newcomer’s high of starting our own business with Shophouse The Boutique Hostel, (working title) was initially meant for nothing more than breakfast and brunch for our guests. But the black hole in the rooftop pantry had expanded and there we were, in a space barely recognisable as a kitchen, finding ourselves suddenly flipping patties onto buns.

26. Royz et Vous

Introduction:

Royz et Vous started on 15 July 2014 as an idea to start building a halal empire. We managed to get an outlet at Bali Lane due to it’s demographics of Muslim community which is located at the heart of Arab Street.

17 Bali Lane was the first outlet which started operations on 19 September 2014. Our objective was to showcase a combination of a cafe and a restaurant into one. In Singapore, a cafe is known to have better beverage while a restaurant is known for better food.

Within a short period, we noticed an increase in traffic to our cafe, attracting both tourists and locals. They enjoy our specialty coffee and halal food created by our dedicated chefs.

It was a tough decision for us to let go of Bali Lane but we soon realized the need to accommodate and serve our increasing number of customers that is made up of new and returning who are our loyal followers.

Naadhira / Head Baker

Born from a deep-seated love for baking and breaking bread, Mother Dough Bakery was founded in May 2018 by head baker Naadhira Ismail. She started her bread and pastry journey in 2012 at The International Culinary Institute, NYC, and spent the next four years in the city working at different bakeries and restaurants. But it wasn’t till she worked at bakery in Brooklyn that her love for the craft deepened, and where she studied the process and rhythms of slow fermentation, and tasted one of the best baguettes.

Naadhira’s favourite way to start the day is having fresh baguette with honey, and dunking a flakey buttery croissant into good coffee. And backing her is a pretty awesome team.

30. Fluff Bakery

Introduction: Head Baker Nursyazanna Syaira started out baking cupcakes in her mom’s kitchen and taking small orders from family and friends as a hobby. One day in 2012, she realized that she wasn’t happy and made the decision to quit her day job as a Public Relations Executive to pursue her dreams. Her dream was to open a quaint little bakery, make the most amazing desserts and to make people happy and fat. 31. Fika Swedish Cafe & Bistro

Introduction: Fika is a social institution in Sweden; it means having a coffee with one’s colleagues, friends, date, or family. The word has quite ambiguous connotations and can mean anything from taking a break from work or other activities, to going on a date. Swedes are among the heaviest consumers of coffee in the world and this practice of taking a break for a coffee, typically with a cinnamon roll and/or some biscuits or cookies, or sometimes a smörgås on the side, is central to Swedish life.

Although the word may in itself imply “taking a break from work”, this is often emphasied using the word fikapaus (“fika pause”) or fikarast (“fika break”), with kaffepaus and kafferast, respectively, as near synonyms. The shorter word fika may equally well mean having coffee with a friend at a café or konditori (a “patisserie-based coffeehouse”)

Introduction: Juliana Jahayer is the founder of Julie Bakes. Started as a home based business she now owns a bakery shop at No. 14 Baghdad Street. Previously she was an Operation Manager in a Shipping & Logistic Company.

Youngest in the family, she grew up with traditional cakes. She often got to taste the luscious salivating bakes from her late Mum who loved baking and cooking. Her sisters continued baking these traditional cakes while she loves to savor them.

35. Overrice

Introduction: Founded by four gentlemen with a passion for travelling and a penchant for discovering different cuisines from all around the world. In their pursuit, one dish that stood out was a certain mediterranean influenced bowl sold from food pushcarts at the corners of Manhattan, New York

​Overrice offers freshly prepared all-in-one bowls with a choice of slow cooked pulled beef, grilled chicken or a plant-based option, fried falafel balls. It is served over seasoned basmati rice, with freshly baked pita bread and mixed salad tucked neatly on the side.

Aside from the expertly prepared versions of Mediterranean rice bowls, Overrice’s expanded menu includes pita pockets (a lighter version of the same variety) and fancy New York inspired mocktails. Also, in the spirit of the “support local” movement, Overrice has partnered with up and coming talented dessert chefs. 

The highlight of the whole Overrice experience are the two sauces that accompany each meal — the elusive yet addictive white sauce, and a fiery hot chilli sauce blend. Though the actual recipes remain secret, they’ve got them committed to memory and down to a science — freshly prepared by hand and bottled daily with no preservatives added.

Every detail has been thought out — their to-go food packaging is made from reclaimed and rapidly renewable sugarcane pulp, (a by-product of the sugar refining industry that remains after the juice has been extracted) a resource that would otherwise be discarded and burned. As an added bonus, their bowls are microwave-safe, making reheating convenient.

36. Chix Hot Chicken

Introduction: Singapore’s First Nashville Hot Chicken Concept Nashville, known as the Music City; famous for their country music, southern hospitality and comfort food and one of the things you’re sure to hear about if you read up on Nashville is a local dish called “Nashville hot chicken,” a local culinary specialty. Nashville hot chicken is quickly becoming Nashville’s worst kept secret. The scorching, crunchy poultry explosion is so uniquely appetizing it’d make Music City a worthy vacation destination even without the music. Like any truly iconic dish, it has a great story to tell, filled with raw human emotion, controversy, and strange hallucinations. 

Back in the 1930s, Thornton Prince III’s (The Founder of Nashville Hot Chicken…) girlfriend was so fed up with his womanising that, one night when he stumbled into his Nashville home late and full of excuses, she decided to teach him a lesson. Putting a malicious twist on the old saying that the way to a man’s heart is through his stomach, she prepared Prince a buttermilk-fried chicken breakfast, doused in what she believed to be an intolerable amount of cayenne pepper and a few others known to be the the world’s hottest peppers. Prince however liked it so much that he opened up a restaurant – as a single man of course and till this day the restaurant, Prince’s Hot Chicken still remains. 

Co-founders Taufik Batisah & Ismail Bober is proud to announce the official opening of Chix Hot Chicken at 1 Jalan Pisang, a halal-friendly fast casual restaurant serving Nashville Hot Chicken which comes with 3 different levels: Mild Hotness, Extra Hotness and Insane Hotness. They also serve Nashville hot chicken sandwich and thick vanilla milkshake. For those who can’t take the heat, they do have non-spicy fried chicken too! For Taufik & Bober who first became friends at the gym 11 years ago, the idea of going into business together was sparked by their love for fried chicken. “The idea of Nashville Hot Chicken intrigued me after watching an episode of Anthony Bourdain’s Parts Unknown. I travelled to Nashville to try this famous dish and simply fell in love with it & the southern hospitality. We brought the concept here and use the hottest organic dry peppers (Carolina reaper & Ghost Peppers) & other “secret” spices for our chicken to bring a different kind of taste & heat to Singapore” said Bober.
