#2 – Gigi Pizzeria

You may not know this – The very first pizza served in Naples, for over 40 years before the Margherita was introduced… Was the Marinara (tomato, garlic, oregano and oil).

The two pizze, which are recognised by the Associazione Verace Pizza Napoletana (The Association of True Neapolitan Pizza) of which gigi is a proud member, are the Marinara and the Margherita.

From ‘Nikko Amandonico’s – La Pizza’

“Pizza Marinara”
“Pizzeria Da Michele is one of the oldest and most original pizzerias in Naples. Founded in 1847 by Salvatore Condurro, in Via Cesare Sersale, today it is ran by Michele (Salvatore’s Grandson) and Antonio (Michele’s son) – at least three generations of pizza-makers have been devoted to keeping the tradition and history of the authentic Neapolitan pizza alive. Signor Michele and Signor Antonio are, like all self-respecting citizens of Naples, deeply proud of the success that pizza enjoys all over the world, and yet, when you mention the names of the many varieties of pizza available in every corner of the Earth, including Italy and even Naples itself, they can’t help turning up their noses… For Signor Michele and Signor Antonio, there is only one pizza worthy of the name. That is the type made with tomato in it’s two original versions: Marinara and Margherita. Everything else just isn’t pizza. Not real Neapolitan pizza anyway.”

In strict compliance with this credo, Pizzeria Da Michele have been serving nothing but pizza Marinara since 1847 and then pizza Margherita after it was introduced in 1889. Outside of Naples, pizza Marinara is often called pizza Napoletana, as if to emphasise its authenticity, but even though there isn’t a single anchovy or prawn in sight, Marinara is its real name. This isn’t a paradoxical joke that Neapolitans play on unsuspecting tourists. The reason is because the name doesn’t refer to seafood but to the times when fishermen, after a night at sea, would stop off at a bakery, extremely hungry but in a hurry to get home, they would ask for a pizza that was light and quick. In fact, pizza Marinara is about as basic and frugal as pizzas go, which still today makes it the perfect snack. Real pizza connoisseurs however, like to take their time and slowly savour its delicious simplicity, as the taste of fresh tomato and oregano mingles with garlic and extra-virgin olive oil in an exquisite balance of flavours, set off by the unmistakable aroma of the wood-fueled oven it is cooked in.
Feeling the pizza of the people was not fit to serve Queen Margherita of Savoy, Raffaele Esposito created the pizza Margherita (resembling the colours of the Italian flag), when he went to cook for her in 1889.

#3 – Mary’s CQ

Mary’s isn’t simply the greatest feed in your postcode. It’s a cultural icon. Your neighbourhood staple. The big bad burger bar that saved Sydney from itself. Splatter by splatter. Sud by sud. Short menu, loud music and plenty of booze is the recipe from which Mary’s continues to grow.

They exist solely for good food, good drinks and Fucking good times. None of the shit stuff. One big fucked-up family. With an open-door policy that lays out a welcome mat for the local wasters, waifs, and weirdos. Open all hours. To all persuasions. For all occasions.

But they do a shitload more than that. We’re scene setters. Game changers. Lords of culture. Genre hoppers. Venue builders. Art ambassadors. Musical mavens. Disciples to the lost art of a big fucking night out.

#4 – Comeco Foods

“3 years ago, I had continuous bad health and was unable to live my usual daily life. I had no choice but to resign from my career. Even my doctor could not find what was causing this illness, and I lived my days suffering from this illness.

One day, I went to see another doctor and the doctor said, “It could be an allergy”.

After my allergy examination, they told me the symptoms were caused from a gluten allergy I had before and now egg and milk as well! Three allergies had developed and I thought “What should I eat from now on”, it was quite a quandary.

I wanted to recover from this allergy, and I decided to go to see a naturopath. The naturopath advised me that, to recover from an allergy, it is important to recondition my intestinal environment. Also, to avoid food additives, genetically modified food and agricultural chemicals as much as I can.

Our meals had to change.

My husband and I had different menus every day. We could not enjoy meal time together. Our normally fun meal times became melancholy. My husband saw how upset I was and even though he was unaccustomed to it, he sincerely thought about and created recipes that both of us could eat. I was encouraged by his kindness. We began studying foods without allergens and food additives.

Since then, slowly our dinner time has become fun again. I realised that it is so lovely to have a delicious meal with my love. Since I improved my dietary habits two years ago, my body is much better. My body hardly react to allergy, and I never catch cold every month how I used to be.

From this experience, I wished that all people, with or without dietary restrictions, could have the same food and spend good times together. Also, I sincerely wish people who suffer from allergies will be able to improve their dietary habits as I did.

With this prayer, we started our business.

Even without dietary restrictions, when people come to our store, everyone can smile and eat delicious food together that is safe and allergen free. Creating such a place is our dream!”
